Pep-paya Pepper Jelly

Pep-paya Pepper Jelly is a hot and tangy pepper jelly, made with preserved papaya. Young fruit are pickled and aged. The eater is able to bite into strands of fruit, dripping with the sweet hot jelly. It is a surprising topping for cheese cakes or can be used in a jam tart.

The fruit of choice is the papaya, also called pawpaw or papaw, and is the fruit of the plant Carica papaya. This plant is a native of the tropics of the Americas, It was probably first cultivated in Mexico.
